Dark Berry Bliss is a five ingredient berry mocktail a new hire can build in under a minute, no bar experience required. That is the whole point.

Two Oregon Fruit Pourable Fruits do the work. Diced Blueberry brings visible fruit and texture. Smooth Marion Blackberry brings the depth. Marion blackberries are an Oregon specific variety, sweeter and more aromatic than the commodity blackberries most operators are pouring, and the difference shows up in the glass.

The build: one ounce diced Blueberry Pourable Fruit, one ounce smooth Marion Blackberry Pourable Fruit, juice from half a lemon, and three ounces cranberry juice, stirred in the glass. Fill with ice, top with one ounce ginger beer. Add two ounces of vodka or gin for the spirited version. Same build, same prep time.

It batches cleanly, too. Scale the fruit, lemon, and cranberry to your service volume, hold the base cold, then pour over ice and top with ginger beer to order so the carbonation stays where it belongs.

For multi unit operators, the case is consistency. Pourable Fruit is shelf stable and portions by the ounce straight from the bottle, so there is no straining, no muddling, and no day of fruit prep. Unit 4 pours the same drink as unit 40, in February or August, whether or not there is fresh berry in the walk in. It also gives you a zero proof option that does not read like an afterthought on the menu, which is where the margin is.
