Contact UsOregon Fruit does not use any of the eight major allergens (milk, eggs, peanuts, tree nuts, fish, shellfish, soy and wheat) or common sensitizing agents (gluten, sesame and sesame products, sulfites, mustard and mustard products, celery and celery products, azo dyes, carmine) in any of our products or in our processing areas.
We are Kosher certified through Orthodox Union for all of our products except any caneberry products (Blackberries, Raspberries and Boysenberries). The whole caneberries cannot be certified Kosher by Orthodox Union even though they are processed similarly to our other whole fruits.
We typically recommend a 1/2 oz of Pourable Fruit per 8 oz serving in beverages, including ones featuring Diced Pourable Fruit. For batching Smooth Pourable Fruit in bubblers, we recommend 16oz (1/2 bottle) per 2.5 gallon batch of lemonade or iced tea.
No, the diced fruit pieces will cause issues with clogging. If you’re interested in offering fruited beverages via bubbler, we recommend our lineup of Smooth Pourable Fruit products.
Aseptic fruit puree is easy to use and easy to store. It requires no processing and is shelf-stable and stored at ambient temperature until use. Our high-quality aseptic purees go through a rigorous QA process so you can be sure there is less risk of off-flavors and contamination.
We only use fruit that has had the seeds and skins removed, that is heated in a kettle for a very short period of time which creates the first microbial “kill step”. The entire system is “sealed” allowing no contamination once the product reaches aseptic temperatures. We quickly cool the puree to protect the freshest fruit flavors and color for your finished product. Each batch is tested by a 3rd party lab to ensure our specifications are met before shipping to our customers.
At a 10 Brix average, a box of puree will contain 4.8 gallons of puree.
The plastic cap on the aseptic bag is fitted with an easy open “peel away” tab. For tote use, we offer for sale a reusable custom tote valve. We also sell a handy quick disconnect set up that can be used to quickly snap onto a bag spout to a pump system to easily and quickly empty the 42# boxes or 425# drums.
The natural occurring proteins in beer, extracted from malt and hops, can create a haze or reduce clarity of the beer. Each fruit contains differing levels of pectin, or proteins, that can also contribute to haze. Our aseptic process deactivates some of the pectins, but different products will have differing levels of pectin in the finished product.
Our fruit purees all have relatively low pH, which is natural for fruit grown in our region. With a small addition of fruit to your brew, you should not experience a significant drop in pH in the finished product, but the pH level of some fruits, (Passionfruit, Black Currant, Key Lime) will contribute a tartness to your finished beverage.
Fruit adds fermentable sugars. Aseptic purees provide a more predictable fermentation and reduces the risk of off-flavors relating to the fruit.
It will change the ABV very slightly, but due to the water activity in the purees, it will not add much unless used in very high amounts.
The best time to add aseptic fruit puree to the brewing process is during the tail end of primary fermentation. We believe this leads to the best overall fruit character in the finished beverage: more vibrant color, more pronounced aroma, and an overarching mid-palate finish with more fruit character.
Yes! Our 11lb boxes are perfect for homebrewing. One 11lb box would be perfect for dosing two 5-gallon carboys.
Concentrates are useful for applications that require more clarity, lower water activity, and less tank space. We recommend our concentrates for RTDs including seltzers and canned cocktails. Purees on the other hand are perfect for craft beers, slushies, and kombuchas. Keep in mind, a concentrate will not provide the umami you would get in a puree.
Our recommendation is that you never buy any canned goods from the grocery store that have been dented or damaged. If you drop or damage a can bringing it home or after storing it in the pantry, you should open the can and check for any “off” aroma before deciding to eat the product. If you are not sure when the can was damaged, err on the safe side and dispose of the canned goods.
All of our cans have an internal non-BPA lining made from polyester material.
We ship our fruit purees with FedEx Freight as well as other common carriers. We have excellent relations with these freight providers, which translates to competitive freight rates that we pass on to our customers.
