Brewers rely on Oregon Fruit’s aseptic purees for quality, consistency, and flavor—so it’s no surprise that every drop counts. But when you’re left with a little extra after a brew, what’s the best way to handle it?

To answer that, we turned to Richard Mendez, who leads Research & Development at Oregon Fruit Company. Rich focuses on fruit systems, product formulation, and developing fruit-forward products for brewers and foodservice operators. Before earning his degree in Food Science and Technology with a concentration in fermentation, he spent nearly 15 years cooking professionally—giving him a rare blend of culinary intuition and technical expertise.

Rich shared his go-to tips for making the most of leftover aseptic puree, both in the taproom and the kitchen.

 


1. Remember: Once Opened, It’s Perishable

Aseptic fruit puree is shelf-stable until the seal is broken—but once open, it behaves like fresh fruit. Use it quickly or plan to preserve it.

2. Don’t Pour It Back — Freeze It Flat

Once the puree leaves the bag or drum, never pour it back in.

Rich recommends portioning and freezing it:

  • In zip-top bags, laid flat for easy stacking
  • In deli quarts for simple thawing and measuring

This keeps quality high and gives you ready-to-use fruit for future ideas.

3. Extend Puree Shelf Life by Transforming It

One of the easiest ways to stretch leftover puree is to incorporate it into another recipe. Rich suggests turning it into:

  • Syrups
  • Sauces
  • Vinaigrettes
  • Glazes
  • Jams or jellies

Acidity from the fruit itself helps extend shelf life, but it’s not the only preservation method. You can strengthen it further through:

  • Increasing sugar levels
  • Heat/thermal processing
  • Freezing
  • Lowering water activity

These layered preservation techniques help keep your puree-based creations fresh longer.

4. A Little Goes a Long Way

Because Oregon Fruit purees are 100% fruit with no added sugar, they’re incredibly concentrated. Just 1–2 pounds of puree can be stretched into several quarts of finished product once blended into another base—helping you reduce waste while creating memorable dishes, mocktails, or garnishes.

5. Mix and Match Fruit Formats

Rich’s culinary training taught him early how different formats of the same ingredient reveal different facets of flavor. Blending puree with other fruit formats helps create a more complete “whole fruit” experience.

Try pairing:

  • Puree + fresh fruit → bright, clean fruit expression
  • Puree + juice → sharper acidity
  • Puree + zest → aromatic lift
  • Puree + fermented fruit → deeper, rounder notes

Dried fruit boosts sweetness, zest elevates aroma, juice sharpens acidity, and puree adds texture and body. Combining formats lets you fine-tune flavor more precisely: ideal for innovation behind the bar or in the kitchen.

6. Think Beyond the Expected

Fruit pairings don’t have to follow familiar patterns. Recently, Rich and fellow R&D Food Scientist Angela Lu discovered an unexpectedly delightful flavor combo: cranberry and caramel.

The natural acids in cranberries (citric and malic) bring bright, sharp tartness. Caramel’s warm, toasted character comes from Maillard reactions—the same chemistry behind roasted coffee or freshly baked bread. When they meet, the cranberry cuts through the caramel’s sweetness, while the caramel rounds out cranberry’s bite. The result is balanced, surprising, and deeply flavorful.

Let that inspire experimentation in your taproom kitchen or beverage program—seasonal ingredients, cross-category pairings, and surprising combinations often lead to your next standout menu item.

7. Balance Tartness and Acidity

Because Oregon Fruit’s aseptic purees are pure fruit, you control the sweetness. If a recipe tastes too tart, tannic, or bright, adjust your ratios or balance it with a touch of sugar, honey, or other ingredients. Dial it in to match your menu style and customer preferences.
