Explore Our 3 Aseptic Cherry Purees
When your roots run as deep as ours do in Salem, Oregon—known proudly as Cherry City, USA—you grow up with a special kind of appreciation for cherries. The very founders of Oregon Fruit Company once owned a cherry orchard right here in the Willamette Valley. And today, nearly a century later, we still celebrate that legacy with three distinct aseptic cherry purees crafted for food and beverage makers who value quality and character.
Let’s take a closer look at the cherries we’re proud to share from our home to yours:
Red Tart Cherry Aseptic Puree (Montmorency Red Tart)
Grown just miles from our facility, our Montmorency red tart cherries are sourced entirely from Oregon’s Willamette Valley. Originally cultivated in France and named for the Montmorency Valley near Paris, these cherries have long been prized for their use in preserves, liqueurs, and—more recently—craft beverages.
Our Chief Procurement Officer has been visiting the orchards and says the crop is looking fantastic this year. Expect a vibrant, bright, and richly tart profile that’s ideal for summer beer styles like Goses, Berliners, and Wheat Ales. This puree brings sharp acidity and brilliant red fruit flavor—perfect for those refreshing warm-weather brews.
Sweet Cherry Aseptic Puree (Dark Sweet Blend)
We blend several beloved Northwest-grown varieties—including Bing, Van, Lambert, and Skeena—to create a dark sweet cherry puree that’s as versatile as it is flavorful. These cherries offer a rich, subtly sweet profile with mild tartness and a clean finish.
Historically revered from Ancient Rome to colonial America, sweet cherries have always had a place in both wellness and indulgence. In the brewhouse, they pair beautifully with stouts, porters, and other dark base beers—adding depth, roundness, and a touch of natural sweetness.
Depectinized Sweet Cherry Aseptic Puree
Need the bright character of sweet cherries with a cleaner pour and higher yield? Our depectinized version offers all the vibrant flavor of our standard Sweet Cherry Puree—but with a thinner texture that makes straining, fermenting, and processing easier. Especially handy in high-volume applications or where precise liquid ratios are critical.
Why Choose Cherry?
Cherries offer great value when it comes to brix, and our Sweet Cherry Puree regularly clocks in at over 20° Brix at single strength. That means more sugar, more body, and more flavor—naturally. Whether you’re aiming for bold fruit character, smooth mouthfeel, or simply a nostalgic taste of summer, our cherry purées deliver.
Oregon grown. Flavor driven.
From orchard to fermenter, we take pride in bringing you the best of Cherry City. Want to explore these purées in your next project? Get in touch with our team or shop today.
