Ingredients
- 2 cans Oregon Fruit Products Dark Sweet Cherries
- Pastry for 2-crust 9" pie
- 1/4 cup Sugar
- 3 tablespoons Cornstarch
- 1 tablespoon fresh Lemon Juice
- 1 tablespoon Butter
Instructions
- Empty the cherries with the liquid into a saucepan, reserving 3 tablespoons of liquid in a small bowl.
- Add the cornstarch to the reserved cherry liquid and stir until dissolved.
- Add sugar and lemon juice to the cherries in the saucepan and heat to a boil, stirring to dissolve sugar. Reduce heat to a simmer.
- Add cornstarch mixture to the saucepan and stir until thick. Let stand while preparing pastry.
- Line 9" pie plate with pastry; fill with fruit mixture. Add butter on top. Adjust top crust; cutting slits for escape of steam; and seal.
- Bake at 400 degrees for 35-40 minutes. Allow to cool before slicing.
