Passion on the Vine is a layered, non-alcoholic passion fruit mocktail created by barista and drinks creator Morgan Eckroth. It starts with Oregon Fruit Passion Fruit Pourable Fruit, adds vanilla and a small pour of tomato water for acidity, then ice and club soda. A stone-ground hibiscus concentrate — whisked like matcha — floats on top.


The tomato water is the twist. It sounds strange and tastes right: a little savory brightness that keeps the passion fruit lively instead of one-note. Stir before your first sip so the layers come together. It's tart, fizzy, and built for a warm afternoon. It also takes a spirit well, if that's the kind of day it is.

Step 1: Make the Tomato Water

Blend or puree tomato and run through coffee filters until it runs clear (will be slightly yellow).

Step 2: Make the Hibiscus Concentrate

To make hibiscus concentrate, in a small bowl, add 6 spoonfuls (roughly 6 grams) of hibiscus to bowl through sifter. Add 1-1.5oz hot water and whisk. Set aside. 

Step 3: Make the Drink

  1. Pour straight into glass 1oz Smooth Passion Fruit Pourable Fruit.
  2. Add 0.5oz tomato water.
  3. Add 0.5oz vanilla.
  4. Fill glass with ice.
  5. Pour 4-5oz of club soda. Stir gently.
  6. Top (float) hibiscus concentrate on top of glass. Garnish with mint.
  7. Stir before sipping and enjoy!
