Chocolate cake, homemade cocoa pudding, whipped cream, and Oregon Fruit Co. Dark Sweet Cherries, layered until there's no room left. This is the kind of dessert that makes people quiet at the table.


Our Dark Sweet Cherries are pitted, packed in juice, and ready to go, meaning no prep, and consistent flavor every time. For the busy home chef, this recipe comes together in stages, chills overnight if needed, and holds up beautifully for a crowd. The cherries do the heavy lifting.

Ingredients

  • 2 cans Oregon Fruit Co Dark Sweet Cherries in Heavy Syrup, drained
  • 1 15.5 ounce Chocolate cake mix, plus oil and egg as directed on package
  • 1 cup white sugar, separated 
  • 3 tablespoons cornstarch
  • 2 cups milk
  • 3 teaspoons vanilla extract, separated
  • 2 cups heavy whipping cream
  • 2 ounces chocolate bar

Directions

Step 1

Drain the cherries: Open and drain the two cans of Dark Sweet Cherries. Save 8 whole cherries for top of trifle. Halve the remaining cherries. Set aside.

Step 2

Bake the cake: Mix cake, oil and egg according to directions. Bake in 12x9 sheet pan for 15-20 minutes. Cool. Once fully cooled, cut into 1” pieces. 

Step 3

Make the Pudding: In a microwave-safe bowl, whisk together one 1/2 cup sugar with the cocoa and cornstarch. Whisk in the milk, a little at a time, so the mixture does not have any dry lumps. Place in the microwave, and cook for 3 minutes on high. Stir, then cook at 1 minute intervals, stirring between cooking times for 2 to 4 minutes, or until shiny and thick. Stir in 2 teaspoons vanilla. Set aside. 

Step 4

Whip the Cream: Beat heavy cream, one 1/2 cup sugar and 1 tablespoon vanilla until stiff peaks form

Step 5

Assemble the Trifle: In empty Trifle Dish, layer half of cake cubes, half of pudding, half of cherry halves and half of whipped cream. Repeat the layering with remaining cake, pudding, cherries and whipped cream. Top with whole cherries. Take the chocolate bar and using a peeler, shave the chocolate over the top of the trifle.

Step 6

Chill: Cover with plastic wrap and refrigerate for at least 2 hours or up to 1 day.
