Rhubarb Puree
Rhubarb does not take over a blend. It adds structure. A little brings a tart edge and some complexity to sweeter fruit, and more of it can carry a sour beer or sorbet by itself. Brewers use it in goses, wheat beers, and ciders. Dairy and frozen dessert makers use it in yogurt, gelato, sorbet and ice pops, where its acidity keeps sweet bases from tasting flat. Beverage makers use it in sodas, shrubs and spritzes. Sauce makers use it in glazes, chutneys and barbecue sauces that need some tartness.
