Filter-Friendly Aseptic Purees: Higher Yield, Real Fruit Character

IT STARTED WITH A BREWER

Obviously we're a big fan of aseptic fruit purees here at Oregon Fruit, for their genuine fruit character, real color, real aroma, and real flavor. For a lot of beverage producers, brewers, and fermenters, they're the obvious choice. And we've got decades of happy brewers, cider makers, and beverage manufacturers to back that up.


In 2018 a brewing partner came to us looking for a fruit solution to be able to more efficiently scale up their best-selling fruited beer brand. They needed a fruit puree with better yield and lower viscosity than what a standard aseptic puree could deliver. They didn't want to sacrifice fruit character, they just needed it to perform differently on their line.


Our food scientists got to work.

SEVEN YEARS OF R&D

Most fruit suppliers don't have food scientists on staff. They're importing a finished product, so what you see is what you get. And if it doesn't work for your line, that's your problem to solve.


Oregon Fruit's in-house R&D team stepped up to the challenge. The goal was straightforward, even if the execution wasn't: reduce particle size, thin out viscosity, and reduce pectin levels, all without touching the color, aroma, flavor, and mouthfeel that make aseptic purees worth using in the first place.


The result, after seven years of development: filter-friendly aseptic purees. A proprietary blend of food-grade enzymes, custom formulated by our in-house food scientists, applied during manufacturing to our standard aseptic puree line.


Same fruit, same sourcing, same price. Treated during production to perform better where it counts.

INTRODUCING FILTER-FRIENDLY

What Changes

  • Reduced filter load. Lower suspended solids means less fouling and faster throughput on filtration-sensitive lines. Your equipment works less hard. Your cleaning cycles stretch further.
  • Thinner viscosity. Filter-friendly purees flow more easily through pumps, membranes, and dosing equipment. No line modifications needed.
  • Higher yield. This one surprises people. Because the fruit stays in suspension rather than dropping out, you get more yield per batch. The fruit you pay for ends up in your product.

What Doesn't

The fruit character. Color, aroma, flavor, and mouthfeel are preserved through the enzyme process. It still tastes like fruit — because it is.

And because our enzymes are processing agents rather than ingredients, there's no label declaration required on your finished product. Filter-friendly purees carry the same clean label benefits as our traditional aseptic line:
