Ingredients
- 1 can Oregon Fruit Products Blueberries in 100% Blueberry Juice - (1 cup of juice drained and reserved for cooking, and blueberries reserved for topping)
- 1 cup Steel Cut Oats
- 2 cups Water
- 1/2 teaspoon ground Cinnamon
- 1/4 teaspoon ground Cardamom
- Dash of Ground Cloves
- 1/4 teaspoon Kosher Salt
- 1 teaspoon Vanilla Extract
- 1 tablespoon Maple Syrup
- Additional toppings: Nuts, Dried fruit, Cream, Maple syrup
Instructions
- Mix together Steel cut oats with water, blueberry juice, and salt in an Instant Pot until salt dissolves. Stir in the cinnamon, cardamom, and clove.
- Secure the lid to the Instant Pot and set to pressure cook for 6 minutes on high. Let the instant pot naturally depressurize (approx. 20 min)
- Once the pot has safely depressurized, stir in Vanilla extract and Maple syrup.
- Serve warm and top with slivered almonds and blueberries, or whatever you prefer!
