Blueberry Oatmeal Breakfast Cake

Ingredients

  • 1 can Oregon Fruit Products Blueberries, drained, discard syrup
  • 1 1/3 cups of Flour
  • 3/4 cup of Quick-Cooking Oats
  • 1/3 cup Sugar
  • 2 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 3/4 cup of Milk
  • 1/4 cup Vegetable Oil
  • 1 Egg

Instructions

  1. Preheat oven to 400°F.
  2. Grease an 8-inch round baking pan; set aside.
  3. Drain blueberries well, blot on paper towels.
  4. In a medium mixing bowl combine flour, oats, sugar, baking powder and salt.
  5. In a small bowl, stir milk, oil and egg; pour all at once into flour mixture.Stir just until moistened (batter will be lumpy).
  6. Gently fold in blueberries; spoon batter into prepared pan.
  7. Bake until cake is golden and pulls away from sides of pan 20 to 25 minutes. Cool on a rack, 5 to 10 minutes. Serve warm.
