Red Tart Cherry Muffins

Ingredients

  • 1 14.5 ounce can Oregon Fruit Red Tart Cherries, drained
  • 2 cups Flour
  • 2 tsps Baking Powder
  • 1/2 to 1 tsp Ground Cinnamon
  • 1/4 teaspoon Salt
  • 2 Eggs
  • 1 cup Milk
  • 1/2 cup Oil
  • 3/4 cup Sugar

Instructions

  1. Combine flour, baking powder, cinnamon, and salt.
  2. Beat eggs lightly; stir in milk, oil and sugar.
  3. Quickly stir egg mixture into dry ingredients; carefully stir in drained cherries.
  4. Spoon into greased muffin cups; bake at 400 degrees for 15 - 17 minutes.
